Xanthan gum is a versatile ingredient used in various recipes. It functions as an emulsifier, stabiliser, and thickening agent. It is made from the fermentation of maize sugar and is excellent for thickening sauces and gravies, manufacturing dairy-free ice cream and preparing salad dressings that are smooth and free of gluten. Additionally, it can substitute for eggs in baking and keep fruit pie filling from running out. Without using large amounts of milk or butter, xanthan gum is the best way to achieve creamy textures in soups and stews. Making emulsions like mayonnaise and hollandaise sauce is also made easier by it. 

How to use Xanthan gum in baking?

When using xanthan gum in baking, it’s essential to follow the recommended guidelines to achieve the desired texture and consistency in your recipes. 

  •   Begin by selecting a reliable baking recipe that specifies the amount of xanthan gum needed. This ensures that the proportions are balanced.
  •   Use a digital scale to measure the xanthan gum precisely. It is typically used in small quantities, usually ranging from 1/4 to 1 1/2 teaspoons per cup of  flour blend.
  • Add the xanthan gum to your dry ingredients, such as  flour, baking powder, and salt. Mixing it with the dry ingredients ensures even distribution throughout the batter.
  • Whisk the dry ingredients, including the xanthan gum, to ensure they are well incorporated. 
  • Proceed with the recipe as directed, incorporating wet ingredients into the dry mixture. Mix until just combined, avoiding overmixing, which can affect the texture of your baked goods.
  •  Different recipes and flour blends may require varying amounts of xanthan gum. If you experiment with your own recipes, start with a smaller amount and gradually increase it to find the right balance. Too much xanthan gum can result in a gummy texture, so be cautious.
  • Let the batter or dough rest for a few minutes before baking. This allows the xanthan gum to hydrate and bind the ingredients effectively, enhancing the texture of the final product.

How to use Xanthan gum in Cooking?

 Here’s a guide on how to cook with xanthan gum.

  •  Xanthan gum is potent, so begin by using a small quantity, usually 1/8 to 1/2 teaspoon, depending on the recipe’s size.
  • Mix xanthan gum with a dry ingredient, such as sugar or flour, before adding it to liquids. This step prevents clumping.
  •  Sprinkle the xanthan gum mixture gradually into your liquid ingredients while whisking vigorously. This helps prevent lumps from forming.
  • Let the mixture sit for a few minutes to allow the xanthan gum to hydrate and thicken. 
  • If you want a thicker consistency, add more xanthan gum in small amount, keeping in mind that a little goes a long way. For a thinner consistency, dilute with more liquid.
  • Xanthan gum can lose its thickening properties when exposed to high heat or acidic ingredients. It’s best to add it near the end of the cooking process or in recipes that don’t require prolonged cooking or acidic ingredients.
  • Xanthan gum should be stored in an airtight container in a cool, dry plce. It has a long shelf life and remains effective for several years if stored correctly.

The best taste and texture for sauces are obtained by combining the xanthan gum with a little oil first, then adding the soy milk or rice milk. This gives the sauce the richness and depth that cream, butter, or eggs would typically impart.
